Ingredients
2cupsmixed berries - 300-320g before blendedfresh or frozen; e.g., strawberries, blueberries, raspberries
1cupsweet cream flavored coffee creamer
12 tablespoons honey or maple syrup
1teaspoonlemon juice
Instructions
In a blender or food processor, combine the berries, coffee creamer, honey or maple syrup (if using), and lemon juice. Blend until smooth and creamy. Taste and adjust the sweetness if needed.
Pour the mixture evenly into popsicle molds. Leave a little room at the top for expansion. Insert sticks.
Place in the freezer and freeze for at least 6 hours, or until fully solid.
To release, run warm water over the outside of the molds for a few seconds. Gently remove the popsicles and enjoy them immediately.
