A few weeks back I posted about my back to school resolution and how it has become a challenge in the middle of my ever growing schedule to find time to make supper each night. I’ve employed some creative solutions such as cooking up meals ahead of time, freezing, and using my slow cooker more. I’ve even tried ~takes a breath~ planning. I hate that part of it. I’m really a fly-by-the-seat-of-my-pants gal when it comes to supper. I like to just wait and see what I’m in the mood for when it comes time to cook. I also don’t enjoy cooking ahead as that takes the fun out of getting to cook each night for me, but I’m working on developing new habits in order to be able to adjust to a more demanding work schedule and still keep family the top priority – and it’s working.

  1. I wold love a nook! I am lucky that my husband does a lot of cooking,but we do plan out our weekly meals.This way we have a weeks worth of dinners and can decide daily what we’ll fix. Love Southern Plate- great recipes and great stories!

  3. Well, Thanks so much to your wonderful recipes, our back to school resolution has been hanging on! Yay! The first one was to cook dinner at least 5 nights a week (left overs count of course 😉 The second was a school wide addoption of Rachel’s Challenge. If you haven’t heard of this you should google it. Anyway, Everyday I challenge my kids to do something nice to someone they don’t talk to very often. In the words of Dr. Seuss – “You have brains in your head. You have feet in your shoes. You can steer yourself, any direction you choose.”

  4. My back to school resolution was to keep more time with the family each day. We have 3 kids (7y,3y and 16mnths) so its been tough trying to give everyone equal time since I have a 90 min commute each way Monday -Friday. BUT as of last Thursday I’ve been getting endless time with the kids since I’m on maternity leave (expecting #4 on 10-10-11) so I’ve also been able to cook 2-3 meals daily. I started freezing yesterday for those first few postbaby weeks. I’ve done a casserole, lasagna, and stew so far.
    Any other suggestions?
