How to Make Sweet Potato Fritters

Step 1: Prep the Sweet Potatoes

Use a box grater or grating attachment on your food processor to shred the sweet potatoes. 

After grating, wrap the sweet potato in a clean kitchen towel and gently squeeze out as much excess moisture as possible. Too much liquid yields soggy fritters!

Step 2: Mix It All Together
