NOTE: The following statement was written in 2013 :).

As many of you know, I had an unfortunate incident with a horse that is going to leave me unable to use my legs for a couple of months. Soon, I’ll manage to get some new posts up but right now my life is a bit on the harried side to say the least. You can follow more of this crazy journey on my post 100 Reasons Why I’m Not A Cowgirl but in the meantime, here are six of my absolute favorite muffin recipes.

If you decide to make any of them, please report back and let me know which ones so that I can live vicariously through your kitchen adventures…

6 Family Favorite Muffin Recipes

Any Kind Any Time Muffins

These are my all time favorite because you mix up the batter ahead of time (A hearty batter of oatmeal and buttermilk!) and then add in whatever ingredients you want just before baking. You can make as few as one or as many as a few dozen at a time!

A dear favorite of my sweet little Katy Rose!

From Scratch Bran Muffins

There is nothing like a good old fashioned from-scratch bran muffin. These have raisins in them but you can add whatever you like best.

Apple Spice Muffins

These are the muffins I usually make on the first day of school to take to teachers as welcome back gifts! Always a favorite wherever I take them.

Peach Cobbler Muffins

All the goodness of juicy peach cobbler in muffin form 🙂

  1. Yummy! You always have just what I’m looking for! 🙂 My kindergartener needs cupcakes with frosting for Friday’s snack this week, and I wanted to make a healthier muffin instead of a cupcake. The Apple Cinnamon ones sound perfect, and I’m going to try a cinnamon cream cheese frosting. Yum!

  2. So sorry to hear about your accident…hope all goes well, just focus on your journey.
I like the idea that Dianne had –for us to send in some of our favorite ideas…
Really like this muffin post….I really love bran muffins of any kind. There’s a couple I’m trying this weekend…I just love to bake more than anything else.
Thanks for an up date………..take care

  3. I started with a comment for this post, and ended up with a full page and still not done. So here is the short of it: I am sorry you are hurt, very glad that it was no worse, and I pray for your continued recovery. (Consider having hubby set up a coffee maker on your nightstand.)

Can’t wait to try the peach cobbler muffins, but don’t have any canned peaches. So I used my last 18.25 oz size box of DH spice cake mix to make the pumpkin spice muffins. Yours didn’t look like a 29 oz can of puree, which is what I had, so I used the18oz can of pumpkin pie filling I’ve had forever. Baking for 29 minutes was not quite enough time, and I worried that my muffins were heavy. They were delicious and I will buy more spice cake mix and smaller cans of pumpkin puree and make more. Meanwhile, I’m about to mix up a batch of your anytime muffins.

Get Well Soon! You have good neighbors and friends, for them to bring you dinner.

  4. Christy, so sorry about your accident. I am keeping you in my thoughts and prayers and hoping for a speedy recovery with no complications. You have brought so much sunshine to so many, and may that light reflect back upon you and heal you soon. (By the way, thanks for the yummy looking muffin recipes).
