We have these coupons that we bought as part of a fundraiser for something or other that my niece was involved in. They are Domino’s pizza coupons so while I am writing my book, we’ve started getting carryout pizza on Saturday nights. You know, big weekend plans and all that…

Well, the past few times my husband has gone after our little half-price pizza, he has come home with a tiny box of this cheesy pull-apart chicken stuff sprinkled with bacon. Apparently, this has become his weekly treat. I gotta admit, it is pretty dang good. Seeing how he has grown to love it so much, I decided to make my own version. And that is what I am sharing with you today.

As with most homemade things, you get twice as much for half the price, which is always a plus! So without further ado, here is your Cheesy Bacon Pull-apart chicken recipe!

Recipe Ingredients:

  • Shredded Mozzarella
  • Any type of bacon you like
  • Shredded Parmesan
  • Garlic Powder
  • Chicken nuggets of some kind*

A Note About The Chicken

*You can make your chicken bites from scratch (maybe make this recipe the night before and double it so you have extras in the fridge) or buy them in the store to save money. Any type of chicken nugget or popcorn chicken will do, but I went for Chicken Breast Chunks so we’d have that wonderful bite of actual pieces of non-formed chicken.

Technically, the Domino’s version of this has tomatoes in it somewhere. However, I’ve never tasted or spotted any form of tomatoes in it. I don’t know if my Domino’s leaves this out, if my eyesight and taste buds have joined together and decided to fail me completely, or if the aliens are eating all the tomatoes out of our order before Ricky gets it home, but I’ve never spied even the tiniest tomato particle. So I made this cheesy bacon pull-apart chicken recipe based on what I have tasted.

Arrange your chicken chunks on a baking sheet as close together as you can, but not on top of each other. Bake them in the oven at the temperature and time listed in the package directions.

If you are using leftover chicken that you made the night before (these chicken strips would be excellent for that — don’t fret over them being strips vs. nuggets), just place them on a baking sheet and put them in at 350 for about ten minutes.

Remove from the oven and give them a very generous sprinkling of mozzarella and parmesan. Then, sprinkle garlic powder over all.

Top with turkey bacon.

Return to oven for about 5 minutes, or until cheese is fully melted.

Ingredients

  • About 1 pound chicken chunks nuggets, or popcorn chicken*
  • 2 cups shredded mozzarella
  • 1 cup shredded parmesan You can use the powdered kind too, if you like
  • 3-4 strips turkey bacon crumbled (You can also use turkey bacon bits from the grocery store if you like)
  • 1 teaspoon garlic powder

Instructions

  4. Love the story about your young man! Mine is 19, so I understand that feeling of seeing them go from little boy to man. It’s an amazing journey. I’m so glad God allows us to take it a day at a time. If it happened all at once I don’t think my momma heart could take it.

    On another note I wanted to ask if you could direct me to a source for valuing vintage Pyrex and Correll. My oldest daughter (18) is very interested in vintage patterns and wants to start gathering these items for her hope chest, but we don’t know if the items we have found in a local antique shop overpriced or not. Any info you could give would be appreciated. Blessings to you Christy!

    1. There are some excellent books but even then, the market varies depending on season and what pattern it is. For example, around November collectors often start selling pieces in order to have Christmas money and I have picked up some steals around them. I once got a $250 Fire King grease jar for a little over $50. What I do, to have the most accurate picture, is write down some specific pieces I am hoping for in the pattern I like and go dig around eBay and Etsy and see what they are going for, both high end and low end prices. I even do this if I am in a store looking at an item, pull up eBay and see if that is a good price or not. More often than not, I can get a better deal on ebay but it is also good to factor in the shipping costs and possibility for damage during the shipping. I know you *can* get insurance but in every experience I have had with postal insurance, they find ten different ways to say it was your fault or how it was packaged and you are just out, so never rely on that and while we’re at it, I don’t recommend paying for it since it doesn’t work anyway :).
      Another great place to look is flea markets and let me tell ya, if you have a Friday-Saturday-Sunday flea market, shop on Sunday! At that point, whatever they sell they don’t have to pack up and lug back home so you can get some sweet deals!

      P.S. Yard sales and thrift stores are great as well and a lot of people have luck with them. It’s hit or miss though and you have to kiss so many frogs to get a prince that I tend to do my primary picking online and in antique stores, where I know I can find what I am looking for most of the time.

      1. Christy I am almost ready to throw a set of 4 Pyrex snowflake pattern Cinderella bowls out the kitchen window. I’ve tried everything including the barkeepers friend stuff and just can’t get the yellow off. I have worked on them for over 2 weeks including soaking and you name it. I’m at the point I think I will box them up carefully and put them away. My daughter in college loves retro things and these bowls were given to me. Yes she really likes retro even wears saddle oxfords and mary janes.

        1. Hi Mastha. I have one suggestion to try for the staining. I haven’t tried it on Pyrex, but it worked on getting horrible, stubborn coffee stains out of a stainless steel travel coffee mug. Add two tablespoons baking soda to a cup of peroxide. Stir it up and it will get bubbly. Pour it into the stained item and let it sit overnight, then wash it out. I hope it works!

        2. Have you tried letting the dish(es) set out in the sun? My husband places dishes outside in the sun, when they have stains on them, like tomato. The sun bleaches the stains and cleans them up nicely!

      2. Thanks for the great tips Christy. I was surprised to see so many pieces of Pyrex and Correll dishes in this particular antique mall. It was hard to not get too excited and buy pieces without knowing if they were overpriced. I’ll be looking up prices on my phone next time we go antique shopping!
