Classic Fried Bologna Sandwich With Potato Chips

There’s a reason folks call a fried bologna sandwich the “poor man’s steak,” but if you ask me, there’s nothing poor about the flavor. When you take a thick slice of bologna and sear it in a hot skillet until the edges get a little char and that American cheese starts oozing over the sides, you’ve got something far better than any cold sandwich from a lunchbox!

I’ve always said that you can tell a lot about a person by how they treat a classic fried bologna sandwich. While it’s a quick lunch anywhere else, down here, it’s a tradition that goes back to Sunday drives and country stores where they’d cut the slices thick right off the log! 

There’s something about the way the edges of the bologna get a little bit of a char in the frying pan that’s just mouthwatering, even if you’re just eating it over a paper towel. If you’re a mayo purist or you like a little kick from a mustard mixture, this sandwich will not disappoint!

Ingredients You’ll Need

  • Bologna
  • White Bread
  • American Cheese
  • Yellow or Spicy Brown Mustard
  • Potato Chips
  • Butter or Mayo

Tips for a Perfect Fried Sandwich

  • The “Peace Sign” Cut: If you’ve ever fried bologna, you know it likes to curl up into a bowl shape the second it hits the heat. To keep your slices of bread sitting flat, use a knife to make three long slits from the center out to the edge (like a peace sign) before you put them in the pan.
  • Don’t Overcrowd: Use a dry large skillet or a well-seasoned cast iron pan. Cook your meat in a single layer so every inch gets that beautiful golden brown crust.
  • The Cheese Melt: As soon as you flip your bologna to the second side, lay your American cheese right on top. By the time the meat is done, you’ll have perfectly melted cheese ready to go.
  • The Smoosh: Once the sandwich is assembled with the chips inside, give it a firm “smoosh” with the palm of your hand. It settles the chips into the bread and makes it much easier to take a big bite!

How to Make a Fried Bologna Sandwich

1. Prep the Meat

Take half of the bologna slices and place them on a cutting board. Make your slits in the edges so they stay flat. If you’re feeding a crowd, keep a neat stack ready by the stove.

2. Get the Pan Moving

Place a large skillet over medium-high heat. You don’t usually need oil or spray because the bologna has enough fat to do the work for you. Lay the slices in the pan.

3. Fry Until Golden

Cook for about 2–3 minutes per side. You’re looking for those edges to get slightly crisp and dark.

4. Build the Flavor

While the meat fries, spread a thin layer of mayo or a mustard mixture onto your white bread. If you’re feeling fancy, you can whisk together yellow mustard and a splash of pickle brine in a small bowl for an extra zing.

5. Assemble and Crunch

Place the hot bologna and melted cheese onto the slice of bread. Pile on a handful of potato chips, top with the second piece of bread, and give it the “Southern Smoosh.” 

Serve it up while it’s still steaming hot!

Ingredients

Instructions

  • Make a small slit halfway through each bologna slice to prevent curling.
  • Heat a skillet over medium heat. Fry bologna until browned on both sides (about 3 minutes per side).
  • Add cheese to the top of the bologna during the last minute of cooking.
  • Spread mayo or mustard on bread.
  • Place bologna on bread, top with a pile of chips, and “smoosh” with the top slice of bread.

  1. Great post, I love hearing others think back with such fondness!! I hope and pray, I can do give my children that too 🙂 We also had fried bologna when I was a kid, put a couple of slits around the outside and make an x in the center!! I forgot how much we loved them, and I think bologna was the first think I was allowed to cook.

    Another yummy sandwich my mama used to make for us, was cream cheese and chopped black olive mixed together and spread on white bread. She would also mix pb and jelly together and spread it on bread or graham crackers for a snack. My dad would make wonderful fried egg sandwichs with cheese and mayonaise, always a great breakfast. My dad also loved pb and banana sandwiches, or pb and maple syrup on toast or biscuts, he used to say he could live off of sandwiches 🙂

  4. Girl! It has been FOREVER since I have had a Fried Bologna sandwich! We add chips to all of our cold sandwiches. You gotta smash them down after you put the top piece of bread on. Think I had better add Bologna to my grocery list ;)The pictures really do this sandwich justice!

  5. We always had Bryan bologna growing up and I just loved the fried bologna with ketchup – never actually ate it with mayo. 🙂 I also love fried egg sandwiches, again with ketchup, though. I’m just a ketchup lovin’ fool, I guess! I grew up in Texas, but now live in Northern Virginia – they like to say this is part of the South because of it being below the Mason Dixon line, but boy I tell you what! Not a bit of Southern in this area!

    I also ate Miracle Whip sandwiches and for peanut butter, nothing but Peter Pan pb in our house! My dad had a pb sammich every night for his dessert.

  6. What a fun little warm spot you tapped into! I loved baloney sandwiches too, but my favorite to this day is a “Fried Tater Sandwich”. We live in a small town that closes down at dark. Sometimes Mama and Daddy didn’t get to the store in time so my Daddy would slice a tater up and fry it, sprinkle with salt and spread with mayo on white bread. Of course we were so excited to see Daddy after work that we would sit around the kitchen sneakin slices of taters off the plate raw and cooked. He would fuss with a laugh that we were gonna eat it all before he could cook it ( but really he was snackin a he went too). This still makes my mouth water and warm my heart. I’ve tried it in a pinch with french fries but it doesn’t taste quite the same.

  7. I have two for ya! I love PB&J with Cheetos stuffed in my sandwich, but my ultimate favorite is Peanut Butter, honey, AND banana on toasted bread! Yummo!!! My husband made this horrible face at me a long time ago when he saw me eat it. I merely said, “Don’t knock it ’til you’ve tried it!” Well, it took a very long time (several years), but he finally tried it and now I have him hooked. I have recruited our youngest son as well. Can’t get our older son hooked on it (yet), but that’s because he won’t eat anything peanut butter.
