As many of you know, I had an unfortunate incident with a horse that is going to leave me unable to use my legs for a couple of months. These are my all time favorite because you mix up the batter ahead of time (A hearty batter of oatmeal and buttermilk!) and then add in whatever ingredients you want just before baking. You can make as few as one or as many as a few dozen at a time!

  2. Oh my Christy-I had no idea you had met with misfortune. Bad enough, for sure, but could have been much worse with a back injury and /or paralysis. I guess even bad things have some good in them. I wish I lived close to you and I would certainly send in a casserole or a dessert. Food makes everything better! Take care and do not overdo—it takes time for things to heal and rushing it only really tends to prolong it. I know that is going to be a difficult thing for you to accept, but trust me, it is true.

It would be such a blessing to be able to help you in this way during this difficult time, since most of us are not close enough to bring food.   7. Christy, I did some freezer cooking yesterday. I prepattied some meatloaves for the freezer. I also made a double batch of the banana muffins. I froze 28 muffins for later use. School will be back in session soon and I’ll be a crazy teacher again. The beginning of school is so chaotic. These make ahead meals will sure come in handy. I’ll be blogging about it later today, hopefully. 😉
