As many of you know, I had an unfortunate incident with a horse that is going to leave me unable to use my legs for a couple of months. Soon, I’ll manage to get some new posts up but right now my life is a bit on the harried side to say the least. These are my all time favorite because you mix up the batter ahead of time (A hearty batter of oatmeal and buttermilk!) and then add in whatever ingredients you want just before baking. You can make as few as one or as many as a few dozen at a time!

    Got my whole family praying for you. Wish we were near enough to bring supper and help out a bit. PLEASE don’t worry that any of us here in the Southern Plate family will forget you while you are mending. We don’t need new posts nearly as much as we need you to take care of yourself and get well.   2. Thanks for the muffin recipes; however, I can’t imagine the Apple Spice muffins being any better than Anytime, Any Kind muffins with apples and walnuts! Will try to report back when I actually get to do a taste test and see! Prayers continuing to go up for you Christy!

    I know you like to be busy and that’s all good but maybe this is God , saying
    take a break and just rest in peace and his enjoy being in his presence. You
    are a blessing to many and now let God Bless you.

  4. I have been missing your post so was totally shocked reading about your accident. My prayers are going out. I wish I lived close to you – I promise I would be doing some cooking for you and family. Hang in there. So many of us love you and miss you and will be waiting for your full recovery. You are very very special. Keep your faith and know that we are all with you in spirit while you recover.

  5. Christy you and your family are in my prayers. If I lived closer, I would be there with food (you can’t be sick in the South without food). Will miss your posts every day but understand. Don’t worry about us – you just REST and HEAL. This will be hard for you to do since you are so active, but God does have a plan. Take care and rely on faith, family and friends. Hang in there.
