The Perfect Summer Treat

I’ve made a lot of popsicles over the years, but these berries and cream ones are the ones I keep coming back to. They’re smooth, just a little tart, and sweet in that way that doesn’t give you a sugar crash later. The sweet cream coffee creamer gives them this silky texture, and the berries add a fresh, fruity punch that feels like summer in every bite.

But what I love most is how easy they are to make. Just blend everything up, pour into molds, and freeze. You can use whatever berries you have on hand (fresh when you can, but frozen works great too), and sometimes skip the sweetener if the fruit’s ripe enough. These (along with a batch of Front Porch Fruit Salads) live in my freezer during the hotter months because they’re the perfect little something when I want a treat without much effort!

Ingredients for berries and cream popsicles

Ingredients You’ll Need

  • Mixed berries (Strawberries, blueberries, raspberries, blackberries)
  • Sweet cream flavored coffee creamer
  • Honey or maple syrup
  • Lemon juice

Make It Your Own

One of the best parts of making your own popsicles is how easy they are to tweak to your taste or dietary needs. Here are a few variations to try:

  • Use creamy coconut milk or full-fat coconut cream for a dairy-free version with a tropical twist.
  • Add texture by stirring in whole berries or a swirl of strawberry puree at the bottom of each popsicle mold before freezing.
  • Try different sweeteners like agave syrup or a splash of simple syrup if that’s what you’ve got on hand.
  • Get a little bit indulgent by dipping them in melted white chocolate before serving.

How to Make Berries and Cream Popsicles

Step 1: Blend Everything Together

In a blender or food processor, combine your mixed berries, coffee creamer, honey or maple syrup (if using), and lemon juice. Blend until smooth and creamy. Give it a taste—depending on your berries, you might want to add a touch more sweetener. If your mixture is too thick to blend, add a splash more creamer to get things moving.

Step 2: Pour into Molds

Carefully pour the berry-cream mixture into your popsicle molds, leaving just a bit of room at the top for expansion. Insert your popsicle sticks (wooden sticks work best here), then tap the molds on the counter to release any air bubbles.

Tip: For a layered look, pour half the mixture in, freeze for about an hour, then top with the rest and freeze fully.

Step 3: Freeze and Release

Transfer your molds to the freezer and freeze for at least 6 hours, or until fully solid.

To release the popsicles, run warm water over the outside of the molds for 10–15 seconds. Gently wiggle the sticks to slide them out cleanly.

If summer had a flavor, I’m pretty sure it would taste like one of these!

Storage Tips

Once frozen, you can pop your Berries and Cream Popsicles out of the molds and transfer them to a freezer bag or an airtight container. They’ll keep for up to 2 weeks, though they rarely last that long around here! Don’t worry, though; we’ve compiled a list of 5 Summer Desserts you can make to restock your freezer!
