Classic Fried Bologna Sandwich With Potato Chips

There’s a reason folks call a fried bologna sandwich the “poor man’s steak,” but if you ask me, there’s nothing poor about the flavor. When you take a thick slice of bologna and sear it in a hot skillet until the edges get a little char and that American cheese starts oozing over the sides, you’ve got something far better than any cold sandwich from a lunchbox!

The “Poor Man’s Steak” That’s Rich in Memories

I’ve always said that you can tell a lot about a person by how they treat a classic fried bologna sandwich. While it’s a quick lunch anywhere else, down here, it’s a tradition that goes back to Sunday drives and country stores where they’d cut the slices thick right off the log!

There’s something about the way the edges of the bologna get a little bit of a char in the frying pan that’s just mouthwatering, even if you’re just eating it over a paper towel. If you’re a mayo purist or you like a little kick from a mustard mixture, this sandwich will not disappoint!

If you love these old-fashioned flavors, you’ve got to try my Classic Hoppin’ John for another dose of Southern comfort!

Ingredients for fried bologna sandwich

Ingredients You’ll Need

  • Bologna
  • White Bread
  • American Cheese
  • Yellow or Spicy Brown Mustard
  • Potato Chips
  • Butter or Mayo

Tips for a Perfect Fried Sandwich

  • The “Peace Sign” Cut: If you’ve ever fried bologna, you know it likes to curl up into a bowl shape the second it hits the heat. To keep your slices of bread sitting flat, use a knife to make three long slits from the center out to the edge (like a peace sign) before you put them in the pan.
  • Don’t Overcrowd: Use a dry large skillet or a well-seasoned cast iron pan. Cook your meat in a single layer so every inch gets that beautiful golden brown crust.
  • The Cheese Melt: As soon as you flip your bologna to the second side, lay your American cheese right on top. By the time the meat is done, you’ll have perfectly melted cheese ready to go.
  • The Smoosh: Once the sandwich is assembled with the chips inside, give it a firm “smoosh” with the palm of your hand. It settles the chips into the bread and makes it much easier to take a big bite!

How to Make a Fried Bologna Sandwich

1. Prep the Meat

Take half of the bologna slices and place them on a cutting board. Make your slits in the edges so they stay flat. If you’re feeding a crowd, keep a neat stack ready by the stove.

2. Get the Pan Moving

Place a large skillet over medium-high heat. You don’t usually need oil or spray because the bologna has enough fat to do the work for you. Lay the slices in the pan.

3. Fry Until Golden

Cook for about 2–3 minutes per side. You’re looking for those edges to get slightly crisp and dark.

4. Build the Flavor

While the meat fries, spread a thin layer of mayo or a mustard mixture onto your white bread. If you’re feeling fancy, you can whisk together yellow mustard and a splash of pickle brine in a small bowl for an extra zing.

5. Assemble and Crunch

Place the hot bologna and melted cheese onto the slice of bread. Pile on a handful of potato chips, top with the second piece of bread, and give it the “Southern Smoosh.”

Serve it up while it’s still steaming hot!

  1. I’M Canadian, my maman would also make fried bologna sandwiches or plain bologna sandwiches. If we were working in the yard for fall clean up she would take her canned tomatoes & if there was any bologna left(as my dad would buy it my a large piece) she stewed the bologna with her tomatoes. Delisouse

  2. Worked with a guy many years ago that had gotten caught in Virginia running moonshine whiskey. Remember he said he had been in many jails but ” Those ladies made the best jailhouse breakfast of scrambled eggs, white bread toast, and big ole thick fried bologna ! “

  3. Has someone else already mentioned peanut butter and cheese? My vegetarian parents picked up this recipe out of necessity when they were hitchhiking in the Netherlands. Get some peanut butter and sharp cheddar or Gouda, make a sandwich out of it, and done. It’s really good.

  4. Fried bologna sandwiches are so good! I love these too:

    ham salad sandwich
    coleslaw, butter, and cheese sandwich
    spaghetti sandwich on garlic toast
tomato and mayo sandwich, raw or broiled tomato
biscuits with tomato gravy (that gravy has to be made with bacon grease)

  5. Peanut butter and Mayo or if ya wanna get all fancy..Peanut Butter,Mayo and Pickles..or or just Peanut Butter and Pickles..No I am not pregnant,I,am a man..lol However I did learn about these Sandwiches when I was a kid and the neighbor lady who was pregnant..Ate these like there was no tomorrow.
This next one I don’t remember how or why I started eating this…but I know I was about 5 or 6 when it started…Blueberry jam and Yellow Mustard sandwiches..yep..lol Here again if ya wanna class it up a bit..Sub Dijon Mustard for the Yellow…but that’s a little high brow for my taste.

  6. Y’all…I am SALIVATING! I rarely comment on things like this, but y’all are MY PEOPLE! haha!
I love love LOVE when my grandma used to make fried bologna with grape jelly and plain Lay’s tater chips on toasted white bread!! Now that I am an adult living in NYC, I still make these at least once a year! A new fave of mine is fried bologna, cream cheese and diced pickled jalapenos on toasted white bread, YUM! Sometimes I’ll even let the cream cheese come to room temp, mix in the diced jalapenos and dice up some fried bologna and mix it all together like a grilled cheese! Sidenote, the cream cheese/bologna/jalapenos mix is also DELISH on a hot dog with crushed up lays and some french fried onions sprinkled on top! Thank yall for the excellent comments, LOVE it!!

  7. When I was young my momma made fried potato sandwiches. Simple as can be, just fried potatoes, mayonnaise and white bread. I remember wating them in front of the the black and white TV in the basement. There was usually a baseball game on and there was a red liquid filled-glass-pendulum-drinking-bird-thingy on top. Oh, and my Marvo the Mustang in the corner.
    What a great memory.
