I know the overnight oats trend has come and gone, but they’re still one of the easiest and tastiest breakfasts you can make. After making my Apple Pie Overnight Oats one fall, I knew I had to get another great flavor combo on the site, and who doesn’t love the heavenly taste of maple and vanilla!?

I know I’ve been leaning into fall flavors with these overnight oat recipes, and it’s mostly because school mornings around here are just plain hectic! These little jars of goodness have been a lifesaver for getting the kids fed and out the door without a fuss. PLUS, they’re healthy but taste so good that the kids don’t even miss their sugary cereal.

It really is just sooo nice to check one thing off your morning to-do list, and these maple vanilla overnight oats offer that sweet relief (uh, literally!).

Quick Tips for the Best Overnight Oats

  • If you’re not a fan of thick oats, I’d recommend starting with a little extra milk when mixing. You can always add more in the morning too!
  • Mason jars are my go-to containers for this recipe. They seal well, are easy to grab from the fridge, and make it feel a little fancy!
  • Don’t skip the salt! It might seem odd in a sweet recipe, but it really helps to bring all the flavors together.
  • If you want to mix things up, try swapping the pecans for walnuts or topping with fresh applesauce or berries. Both work really well with the maple vanilla flavor!

How to Make Maple Vanilla Overnight Oats

1. Prepare the Mixture

Start by adding your oats, milk, Greek yogurt, maple syrup, vanilla, and salt to a medium bowl and give everything a good stir until it’s all combined.

2. Divide Into Containers

Next, divide the mixture evenly between 3 small containers and pop the lids on. Place them in the fridge for at least 4 hours, but overnight is even better!

3. Add Toppings & Enjoy!

When you’re ready to eat, give your oats a good stir and add a splash of milk if you like them a little thinner. Finish them off with an extra drizzle of maple syrup and a handful of pecans if you’re feeling fancy.

Enjoy!

Storage

These maple vanilla overnight oats will keep for up to 5 days in the fridge. I like to make a big batch on Sunday and work my way through them during the week. Just give them a good stir before eating and add a splash of milk if they’ve thickened up too much.

Maple Vanilla Overnight Oats FAQs

Is it safe to put vanilla extract in overnight oats?

Yes, totally safe! Since you’re only using a tiny splash (around ¼ to ½ teaspoon), there’s nothing to worry about. Such a small amount is just enough to add a lovely hint of vanilla flavor, without any health concerns.

Can I use a different type of milk?

Of course, any milk works here. I personally love using regular ol’ milk for an extra creamy texture, but almond, coconut, or any non-dairy milk all do the trick. Just keep in mind that the thickness may vary slightly depending on which you choose.

Can I make a bigger batch?

Yes, and I highly recommend it. I usually double the recipe at the start of the week, so I have breakfast ready to go every morning. Just scale up the ingredients and store them in separate containers.

Can I eat them warm?

You totally can! I know “overnight oats” sounds like a cold dish, but if you prefer warm oats, just microwave them for 1-2 minutes. Give them a stir halfway through to make sure they heat evenly.
