Out of all childhood treats, Little Debbie’s Oatmeal Cream Pies were always my absolute weakness. I mean, how can you resist two soft, chewy oatmeal cookies filled with a creamy center? But as an adult, I’ve found that processed foods don’t agree with me the way they used to. And honestly, I’d rather my kids skip them too.
I’ve already made traditional homemade Oatmeal Cream Pies, but now that the fall season is finally here, I’m in full pumpkin mode. Ingredients
- Unsalted butter (softened)
- Brown sugar
- Pumpkin puree (make sure you don’t get pie filling!)
- Egg yolk
- Vanilla extract
- Molasses
- All-purpose flour
- Baking soda
- Pumpkin pie spice

My Top Tips for Success
- You can always chill the dough if it feels too soft or sticky. Even 20–30 minutes in the fridge will make it much easier to scoop and shape.
- I like to use a cookie scoop to keep my cookies uniform in size. This ensures they bake evenly and pair up nicely for the sandwiches.

How to Make Pumpkin Oatmeal Cream Pie
1. Preheat the Oven
Preheat the oven to 350°F. Then line your baking sheets with parchment paper.
2. Mix Wet Ingredients
Grab your mixer and beat together the butter and brown sugar until creamy. Then mix in the pumpkin, egg yolk, vanilla, and molasses until combined.


3. Mix Dry Ingredients
Next, add your flour, baking soda, pumpkin pie spice, and salt, mixing just until everything comes together. Be careful not to overmix! Then fold in your oats.


4. Scoop into the Baking Sheet
Now scoop about 1½ tablespoons of dough onto your prepared baking sheets, leaving about 2 inches between each one.


Then take a fork, dip it in some sugar, and gently press each cookie down a little.

5. Bake
Bake for 9–11 minutes, until the edges are set, but the centers still look a little soft.
Let pumpkin oatmeal cookies cool on the baking sheet for 5 minutes, then move them to a wire rack to cool completely.

6. Make the Filling
To make the filling, beat together the butter and cream cheese until smooth. Then add in your marshmallow creme, powdered sugar, vanilla, pumpkin pie spice, and a pinch of salt. Keep beating until it’s all light and fluffy



7. Assemble
Grab half your cookies and spread about 1 tablespoon of filling onto the flat side of each one. Then sandwich them with the remaining cookies and gently press to hold everything together.
