Savory Crockpot Italian Beef Sandwiches

We’re talking about a beef roast that slow-cooks in savory gravy until it falls apart with a fork, then gets a massive flavor punch from a bottle of zesty Italian dressing. Pile it onto a toasted bun with melty mozzarella and you’ve got a crowd-pleaser in about 15 minutes!

I love taking them over to a tailgate or potluck because they stay nice and warm in the slow cooker until everyone is ready to eat. These also make a great weeknight supper or game day meal at the house, and leftovers heat up like a dream.

- Your choice of Roast
- Beef gravy
- Zesty Italian Dressing
- Onion chopped
- Bell peppers
Tips for the Perfect Italian Beef
- The Big Drain: After the roast has cooked all day, make sure to drain off the cooking juices before you shred the meat. This ensures your final sandwich is coated in that delicious Italian dressing rather than watered-down gravy.
- Sauté the Veggies: Don’t just throw raw onions and peppers into the crockpot! Giving them a quick browning in a skillet first caramelizes the edges and makes them much more flavorful.
- Go Low and Slow: While you can cook this on high, the beef is always a little more “melt-in-your-mouth” tender if you let it go for the full 7-8 hours on low.
- Customize the Toppings: If you like a little heat, add a few banana peppers or a smear of horseradish sauce to your bun before serving.
How to Make Crockpot Italian Beef
1. The Slow Cook
Place your beef roast in the slow cooker and pour the can of beef gravy right over the top. Cover it up and let it cook on low for 7–8 hours (or high for 3–4 hours). Resist the urge to peek!


2. Shred and Season
Once the meat is tender, remove it from the pot and discard the cooking juices. Shred the beef with two forks and return it to the crockpot.


Now, pour in that entire bottle of zesty Italian dressing and give it a good stir to coat every bit of meat.
3. Sauté the Peppers and Onions
While the beef soaks up the dressing, chop your veggies. Sauté them in a skillet over medium-high heat until they are tender and slightly browned. Stir these right into the beef mixture.


Turn your slow cooker to the “warm” setting. This allows the flavors to settle while you prep your buns and get the family to the table.
I don’t add anything to this but if your skillets tend to stick, you might want to add a tablespoon or so of cooking oil before adding in your veggies.
4. Serving
Pile a generous portion of the beef onto your buns and top with a slice of mozzarella. If you have the time, pop the open-faced sandwiches under the broiler for a minute to get the cheese bubbly and the buns toasted.

Storing and Reheating
This beef stores like a dream in an airtight container for up to 4 days. When you’re ready for round two, just reheat a portion in the microwave or in a small saucepan on the stove. It actually makes a fantastic “messy fries” topping if you have leftovers but run out of buns!

Ingredients
- Beef Roast Pot roast, chuck roast, sirloin roast, top roast, etc. Whatever kind you have, just not eye of round
- 1 can beef gravy
- 1 bottle Zesty Italian Dressing
- 1 Onion chopped
- 1-2 bell peppers chopped
Instructions
- Place roast in slow cooker and pour can of beef gravy over. Cover and cook on low 7-8 hours or high 3-4 hours.
- Remove roast from slow cooker and discard juices. Shred meat and return to slow cooker. Pour bottle of dressing over meat and stir.
- In large skillet, place onion and bell pepper. Sauté over medium high heat until tender. Stir into beef mixture.
- Cover and place on warm until ready to serve. Serve on buns and top with mozzarella cheese.

Christy, i just came back from BECOMING & had the priviledge of attending your seminar (on friday night. I’m the despearate mom/wife/business owner who asked if i could use the ‘back-up meals’ as our everyday meals… Lol) Thank you so much for the much-needed motivation & encouragement; putting dinner on the table everynight now seems like a closer reality rather than a far-off dream… Lol. Anyway, now that i am home, pinning your recipes like crazy & getting my ‘game plan’ together before the craziness starts back next week, i was wondering if/how you would go about freezing any leftovers from this recipe and then preparing those leftovers (from frozen) when we’re ready to eat them.

I would just throw it in a freezer bag and freeze, then to have for another meal you can either thaw it and heat in the microwave or in a saucepan on the stove top, or you could put it back in the slow cooker until heated through.

Christy, I have made and enjoyed this recipe so many times, but had to find a way to make it gluten free because my husband has celiac disease. It was so simple — just substitute an equal amount of gluten free beef broth for the beef gravy and you can’t tell the difference. Of course, you have to use gluten free bread or buns for the gluten free folks, but that is an easy change. Thanks for this wonderful and easy recipe. My grandchildren just rave about the sandwiches!
