Stew is one of my favorite winter comfort foods. There’s nothing like enjoying a big bowl of stew with the family when the temperature drops but I find myself enjoying this dish anytime of year. You’re going to enjoy this quick and easy recipe for smoked sausage and beef stew in the slow cooker.

It takes just 15 minutes to prep this stew. Then you let your slow cooker work its magic for 4 to 6 hours. In the end, you’ll have a flavorful sausage and beef stew, overloaded with vegetables like tomatoes, potatoes, carrots, corn, and celery, to serve your ravenous family.

Recipe ingredients for slow cooker smoked sausage and beef stew.

Recipe Ingredients

  • All-purpose flour
  • Salt
  • Pepper
  • Beef, trimmed and cut into 2-inch cubes
  • Smoked sausage, sliced
  • Diced tomatoes
  • Golden potatoes, cut into 2-inch cubes
  • Carrots, chopped
  • Onions, chopped
  • Celery, chopped
  • Frozen corn kernels 
  • Beef broth
  • Minced garlic
  • Dried thyme

Toss beef in flour, salt, and pepper.

In a small bowl, combine the flour, salt, and pepper.

Dredge the beef cubes in the flour mixture and then transfer them to a 5-quart crockpot. 

Add all remaining ingredients to slow cooker.

Cover and cook on low or high.

I strongly recommend serving your sausage and beef stew with some crusty bread, of course. How else are you going to soak up all the juicy leftovers at the bottom of your bowl?

Recipe Notes

  • For a faster cooking time, coat the beef in the flour mixture and then brown it in a skillet over medium heat with 2 tablespoons of olive oil. Drain the mixture prior to transferring to the crockpot. Cook on high for 3 to 5 hours. 
  • Any cut of beef works for this stew recipe. I used the pre-cut stew beef you can find at your local grocery store.
  • You can also substitute the smoked sausage in this recipe for your favorite sausage. Try spicy Italian sausage if you want your stew to have a bit of a kick.
  • Speaking of spice, you could also add a teaspoon of chili powder or two teaspoons of Cajun spice for more heat.
  • If you prefer your stew a little thicker, you can combine 2 tablespoons of all-purpose flour with 3 tablespoons of water and stir the mixture into the crockpot 1 hour before the stew is finished cooking. This will create a thicker “gravy” for the stew.
  • Instead of crusty bread, serve your sausage and beef stew with your favorite pasta, egg noodles, cornbread, or homemade mashed potatoes
  • For more flavor, add 2 sprigs of chopped fresh rosemary to the crockpot and a sprinkle of parsley when serving.

  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp pepper
  • 1.5-2 pounds beef, trimmed and cut into 2-inch cubes
  • 1 pound smoked sausage, sliced
  • 1 can diced tomatoes 15oz
  • 2-3 medium golden potatoes, cut into 2-inch cubes
  • 1 cup carrots, chopped
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • 1 cup frozen corn kernels
  • 1/2 cup beef broth
  • 1 tbsp minced garlic
  • 1 tsp dried thyme

  2. We eat a lot of beef stew in the winter. My husband is a big meat lover so adding sausage with the beef stew meat will definitely make him happy.

  3. This looks delicious although I’m not a fan of sausage. Adding the extra spices may be the answer if I leave the sausage out. I also might try some chopped pepperoni. I guess I need to head to the grocery store now!

  5. What is the purpose of coating the beef in flour? Is it to offer a little thickening? If so, could you leave out the flour step and just use less broth?

  6. That does sound really good. To be honest, the only stopping me from making it is the cost of meat these days. I might skip the stew meat just because of the cost.
