  • White onion
  • Garlic
  • Flour

  • One head of cauliflower
  • One medium carrot
  • Pepper Jack cheese
  • Sharp white cheddar cheese

Step By Step Instructions for Cauliflower Soup With Cheese

Melt butter in a large pot.

Melt butter in a large pot over medium heat.

Saute garlic and onions.

Add garlic and onion and sauté until onions are tender.

Stir in flour.

Add flour to roasted garlic and onions and stir until the mix becomes clumpy.

Add milk and rest of ingredients to cauliflower soup and simmer.

Next, gradually whisk in the milk.

Add broth, salt, carrot, and cauliflower florets. You could also add black pepper to taste.

Then simmer for 15 minutes or until cauliflower is tender.

Pulse soup in blender until smooth.

Transfer the cauliflower soup to a blender and pulse until smooth.

Return soup to pot and add cheese.

Return soup to the pot. Add both types of cheese and stir until melted and combined with the soup.

Ingredients

  • 2 tbsp butter
  • 1 white onion diced
  • 2 tsp garlic minced
  • 1/4 cup flour
  • 2 cups milk (any kind you like)
  • 3 cups chicken broth or vegetable broth
  • 2 tsp salt
  • 1 mead cauliflower chopped
  • 1 medium carrot shredded
  • 1 cup Pepper Jack cheese shredded
  • 2 cups sharp cheddar cheese shredded
  • cooked bacon (Optional) as much as desired

  • Add the cheese and stir until melted and combined with the soup. If you would like to add cooked bacon this would be a great place to add it in. Serve with extra cheese if desired.
    1 cup Pepper Jack cheese, 2 cups sharp cheddar cheese, cooked bacon (Optional)

    We LOVE cauliflower so much but have never thought of making soup with it! This sounds delicious, and I’ve put it on my list of things to make-after Thanksgiving and all the leftovers, of course. My family loves cauliflower, steamed with buttered, toasted, dried bread crumbs over it. I usually melt 1 stick butter in a saucepan, then stir in about a cup of plain bread crumbs and stir until browned a little, then pour over the cauliflower. One of my most requested sides.

    I like to slice my carrots instead of the strips and I also like to use canned milk. The canned milk gives it a richer taste in my opinion. I have also tried and like cutting up the cauliflower into smaller pieces and not pulsing it in the blender. Any way you choose to fix this soup, it will be great!

    I just have to say that, despite the current craze for cauliflower, most of the recipes I have tries have not been the greatest. That all changed when I saw this recipe! It is absolutely the best creamy/cheesy soup and tastes so rich and satisfying. I prefer to use 1 cup of shredded Cheddar instead of two and to increase the amount of onion. I also make sure to sprinkle a good amount of cooked bacon before I serve it, as it adds so much extra flavor.
