I have had this with lemon pudding. as a diabetic I would make this with ricotta or cottage cheese even sour cream in a pinch. those not caring for pineapple can try fruit cocktail or even better fresh berries. with so much love around you I predict a rapid recovery altho I know the days are long, been there.
