With the combination of a shortbread cookie, whipped cream, and juicy fruit pie filling, they are a one-bite treat that your friends and family will love.
Yes, that’s right, you only need three ingredients to make these cookie bites. You also only need a few minutes to add whipped topping and a dollop of fruit pie filling to each tender shortbread cookie.
In no time at all, they’re ready to eat or take to your next gathering or potluck. Everyone will want to try a bite! You can also use any kind of fruit pie filling you like. For example, in this post, I’m using blueberry pie filling, cherry pie filling, and apple pie filling. But sometimes I stick to just one flavor. It depends on how I’m feeling!

- Shortbread cookies (the Lorna Doone ones are good and easy to use)
- Fruit pie filling of your choice (you can stick with just one if you like)
- Whipped topping (here’s my recipe for homemade whipped cream)
How to Make Fruit Pie Cookie Bites
Using a star piping tip (or regular-size tip of your choice, rosette works just as well), swirl a little border around each cookie as pictured above.
This just takes a couple of minutes at most.
Note: I usually always have icing bags on hand. I buy a big box of the disposable ones at Michael’s every now and then using a half-off coupon and they last me forever.
If you don’t have any, reinforce a corner of a gallon zipper seal bag by placing clear tape over it. This keeps it from stretching while you pipe your topping or icing out. Then, place your tip in the bag and snip off just the tip of it, enough so that the opening of the tip is fully exposed. This is an excellent icing bag in a pinch.
Using a small spoon, place a dollop of pie filling in the center of each cookie.
The border will help hold it in place and you now have a beautiful little pie bite.
Oh my goodness, these are so pretty! They are just the right amount of sweetness, too.

This is one of those recipes you’ll want to serve immediately and not store any leftovers. But in a pinch, they’ll probably last a few hours in the fridge.
As mentioned, you can use any flavor of pie filling, like cherry pie filling or just apple pie filling in fall to make apple pie cookie bites. Another option is to add a dollop of lemon curd for something different.

I have a question, please. If made ahead and taken somewhere, do the cookies get soggy?
I don’t think they would get soggy but the main thing is they will be really difficult to travel with because I’m afraid the whipped topping and pie filling would get tossed about a good bit in the car. I would get my whipped topping in an icing bag and assemble them on site. OR you might could try making them ahead of time and freezing them, then taking them directly from the freezer to the car. I think that would work beautifully.
