At Last! Today is the debut of Quick Fix Suppers, the video series I’m hosting on SouthernLiving.com. I’m so excited to bring you this series, and especially today’s recipe! Since filming these a few weeks ago, I’ve lost count of how many times I’ve made the recipe I’ll be showing you today. It’s just that good (and so very simple). At the end, you’ll see the coolest tip, too!

New York, NY – Southern Living introduces “Quick-Fix Suppers,” a new video series starring cookbook author and blogger Christy Jordan of Southern Plate, who demonstrates how to make dinner in 45 minutes or less.
Daily time-saving tips accompany Jordan’s weekly 3- to 4-minute, how-to videos so people can spend less time in the kitchen and more time around the table. The video series is a companion to the “Quick-Fix Suppers” column debuting in the magazine’s June issue, hitting newsstands Friday, May 20, and features new video content updated weekly.

LOVE the muffin tin idea. We’re actually having chicken tacos for dinner and they are already in the marinade in the fridge. A little different than what you did, but kind of the same. Can’t wait to have them and to use your muffin tin idea. Thanks for the timely instruction!
