- Sauté the Veggies: Don’t just throw raw onions and peppers into the crockpot! Giving them a quick browning in a skillet first caramelizes the edges and makes them much more flavorful.
- Go Low and Slow: While you can cook this on high, the beef is always a little more “melt-in-your-mouth” tender if you let it go for the full 7-8 hours on low.

How to Make Crockpot Italian Beef
1. The Slow Cook
Place your beef roast in the slow cooker and pour the can of beef gravy right over the top. Cover it up and let it cook on low for 7–8 hours (or high for 3–4 hours). Resist the urge to peek!


2. Shred and Season
Once the meat is tender, remove it from the pot and discard the cooking juices. Shred the beef with two forks and return it to the crockpot.


Now, pour in that entire bottle of zesty Italian dressing and give it a good stir to coat every bit of meat.
3. Sauté the Peppers and Onions
While the beef soaks up the dressing, chop your veggies. Sauté them in a skillet over medium-high heat until they are tender and slightly browned. Stir these right into the beef mixture.


Turn your slow cooker to the “warm” setting. This allows the flavors to settle while you prep your buns and get the family to the table.
I don’t add anything to this but if your skillets tend to stick, you might want to add a tablespoon or so of cooking oil before adding in your veggies.
4. Serving
Pile a generous portion of the beef onto your buns and top with a slice of mozzarella. If you have the time, pop the open-faced sandwiches under the broiler for a minute to get the cheese bubbly and the buns toasted.

Storing and Reheating
This beef stores like a dream in an airtight container for up to 4 days. When you’re ready for round two, just reheat a portion in the microwave or in a small saucepan on the stove. It actually makes a fantastic “messy fries” topping if you have leftovers but run out of buns!
