Put an iron skillet in a cold oven, and preheat the oven to 425 degrees. Prepare the batter by combining the eggs, warmed milk, flour, sugar, vanilla extract, and salt in a large bowl.

Whisk the batter until all the ingredients are mixed well and lump-free. Set the batter aside and wait for the oven to be completely preheated.

  • 3 eggs large
  • 1/2 cup milk warmed
  • 1/2 cup all-purpose flour
  • 1 tbsp sugar
  • 2 tsp vanilla extract
  • 1/8 tsp salt
  • powdered sugar to dust

Instructions

  • Place iron skillet into cold oven and preheat to 425 degrees.
  • While preheating, prepare the batter.
  • In a large bowl, whisk the eggs, warmed milk, flour, sugar, vanilla, and salt until all lumps are gone. Set aside until oven is ready.
  • Once preheated, remove the pan from the oven and place the butter into the pan to melt. Spread the butter so it covers the bottom. Pour the batter into the pan, do not mix into the remaining butter.
  • Place the skillet into the oven and bake for 20-25 minutes, until sides are golden brown. Remove from the pan and serve immediately.

  1. I am thinking of making this for Christmas morning and wonder what size pan to use. I have a 10″ and a 12″. If I use the larger one should I increase the recipe amount? There will only be 3 of us but our son is a good eater. I will probably also cook bacon and both my fellows LOVE bacon.
