This creamy and flavorful vegan butternut squash recipe is perfect for a cozy fall day. When I say it’s flavorful, I mean it. It includes butternut squash, vegetable broth, onion, and all the seasonings, including rosemary, ginger, sage, and garlic. It’s naturally vegan, gluten-free, and dairy-free, and tastes SO good!

Fortunately, this is also a very easy butternut squash soup recipe. All you need to do is cook the onion, then add the squash, then add the seasonings and broth, and let it simmer. The final step is to add the ingredients to a blender to give it that smooth and creamy texture. It will be ready in about 45 minutes. This soup works great as a side or main and I love to serve it for supper with some homemade cornbread (it is the Southern way).

Now, there’s a lot to love about this soup. But besides it being easy to make, absolutely delicious, and versatile, it’s also a great meal prep option. In fact, I’d go as far as to say it tastes even better the next day. Yep, I said it. All you need to do is quickly reheat it in the microwave and lunch is ready in a flash!

  • Vegetable oil (or olive oil)
  • Yellow onion
  • Salt and black pepper
  • Butternut squash
  • Minced garlic cloves
  • Fresh sage
  • Fresh rosemary

How to Make Vegan Butternut Squash Soup

Heat oil in pot over medium heat.

Heat up the oil in a large pot over medium heat.

Add onion to pot.

Add the chopped onion…

Add salt to pot.

Add pepper to pot.

And black pepper to taste. 

Cook onions until translucent.

Heat up until onions are translucent (5 to 8 minutes).

Add squash to pot.

Next, add the diced butternut squash.

Cook butternut squash until it softens.

Cook until it softens up, stirring occasionally (about 10 minutes).

Add garlic to pot.

You might need to make a couple of batches depending on the size of your blender.

  • Store leftover soup in an airtight container in the fridge for up to 4 days and simply reheat it in the microwave.
  • You can also freeze leftovers for up to 3 months. Thaw in the fridge overnight before reheating in the microwave.

  • If you’re not vegan, you can use chicken broth instead of vegetable broth if it’s all you’ve got on hand.
  • If your soup is too thick for your liking, add another ½ to 1 cup of broth and blend.
  • Want some heat? Add 1/4 teaspoon of crushed red pepper flakes, cayenne pepper, or paprika.
  • Want to make curried butternut squash soup? Add 1.5 teaspoons of curry powder with the other herbs.
