How to Make Cadbury Cookie Easter Bars
Step 1: Prep the Pan and Oven
Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or lightly grease it to prevent sticking.
Step 2: Mix the Wet Ingredients
In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, mixing until fully combined.
Step 3: Combine the Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients, stirring until a thick cookie dough forms.
Step 4: Add the Chocolate
Fold in semi-sweet chocolate chips and chopped Cadbury Mini Eggs, making sure they’re evenly distributed throughout the dough.
Step 5: Press and Top
Press the dough evenly into the prepared baking pan. Sprinkle whole Cadbury Mini Eggs on top for a festive finish.
Step 6: Bake Until Golden
Bake for 22–25 minutes, or until the edges are golden brown but the center is still slightly soft. The bars will continue to set as they cool, giving them the perfect chewy texture.
Step 7: Cool and Slice
Let the bars cool completely in the pan before slicing into squares. This helps them hold their shape and makes cutting easier.

Recipe FAQs
Frequently Asked Questions
1. Can I use a different type of chocolate instead of semi-sweet chocolate chips?
Yes! Milk chocolate chips or white chocolate chips would work well if you want a sweeter taste. You can also use dark chocolate for a richer flavor.
2. Do I need to chop the Cadbury Mini Eggs?
Chopping most of the Mini Eggs helps distribute them evenly throughout the dough. Leaving a few whole on top makes them stand out for a more festive look.
3. How do I get clean slices when cutting the bars?
Let the bars cool completely before slicing. Use a sharp knife and wipe it clean between cuts for the best results.
4. Can I make these cookie bars ahead of time?
Yes! These bars stay fresh for several days and freeze well, making them a great make-ahead treat for Easter gatherings.
5. Can I double the recipe for a larger crowd?
Absolutely! You can double the recipe and bake it in two 9×13-inch pans or use a larger sheet pan. Just keep an eye on the baking time, as a thinner layer may bake faster.

These bars were SO easy to make and were absolutely delicious! They were are our Easter dessert and I’m sure they’ll be a hit. I bought two bags of the Cadbury eggs and one bag chopped was just the right amount (maybe a little more than 1 1/2 c. but you can never have too much chocolate lol) for the recipe and I just tucked about a 1/2 cup of the whole ones from the other bag into the top before baking. They came out perfectly!
Yay! Thanks so much for your comment!!
