I hope you had a wonderful Easter holiday. We had a great day at my mother’s on Saturday, complete with dyeing Easter Eggs, egg hunts, and a wonderful Easter meal (starring ham, of course!). Then we came back here for our flashlight Easter Egg hunt in the backyard before turning in and waiting for the Easter Bunny. Easter morning was filled with the kids going through their treats and a really great service courtesy of Pastor John Dees. It doesn’t get any better than that!
So here it is Monday and I have a care package of ham in the fridge thanks to my Mama. What to do? In case you have the same bounty, here is my list of favorite recipes with ham leftovers. Just click on the link to be taken to the corresponding blog post. Have a WONDERFUL Monday!

We had ham, fried chicken, with potato salad, seafood newberg over mashed potatoes, corn, peas, broccoli and rice casserole, rolls, ice tea, strawberry short cake, rice krispies treats and chocolate and vanilla cake. Easter was very enjoyable.
We had ham with your Easy Peasy Glaze, baked root vegetables, sweet potatoes, deviled eggs and Cheddar Bay Biscuits. Strawberry shortcake and pb cookies.
Only the 2 of us to eat.
We had the total southern meal. Glazed ham, fried Oakes, twice baked potatoes, fresh corn and green beans. Deviled eggs with old bay seasoning, relish trays, and 5 cup salad were included. To top it all off there was cheesecake with praline sauce and your cafeteria peanut butter bars. May not have been low cal but all was gluten free – no easy feat!!!
We had a great day with church then my husband’s son & family came for dinner. We had ham, macaroni salad, deviled eggs, baked beans & crescent rolls. It was a wonderful day!
My favorite recipe for leftover ham is my own version of a sandwich spread called peppered ham. I chop my ham and drop it in the food processor with pieces of onion and bell pepper. When everything is pretty much to a minced consistency, I add mayonaise, about a teaspoon of mustard, a half-teaspoon of ketchup, and a little black pepper. This makes a yummy sandwich spread that is great on crackers as well. The best part is that it just gets better after its set in th fridge for a while.
Hey Christy, we had a wonderful Easter, we had Ham, Cheeses, Assorted Rolls, chips and dips, deviled eggs, assorted veggie trays, pasta salad, potato salad, chicken salad, mexican dip, red velvet cake. but best of all I made 4 of your fan-tab-u-luscious (is this a good word?) you get the idea. STRAWBERRY PIES. They were great!!! Thanks for this all all your recipes. Oh yes, we had a great Easter Egg Hunt . Then everyone was back into the kitchen for more STRAWBERRY PIE!
