This will be a quick little post for a quick little recipe. ๐ These Easy Fruit Pie Cookie Bites come together in minutes and are cute as can be! With the combination of a shortbread cookie, whipped cream, and juicy fruit pie filling, they are a one bite treat that your friends and family will love.
To make these, you’ll need a package of shortbread cookies (the Lorna Doone ones are good and easy to use), fruit pie filling of your choice (you can stick with just one if you like), and some whipped topping.*
*If you’d like to make your own whipped topping, I have a recipe and instructions on this post.
Using a star piping tip (or regular size tip of your choice, rosette works just as well), swirl a little border around each cookie as pictured above. This just takes a couple of minutes at most.
Note: I usually always have icing bags on hand. I buy a big box of the disposable ones at Michael’s every now and then using a half off coupon and they last me forever. If you don’t have any, reinforce a corner of a gallon zipper seal bag by placing clear tape over it. This keeps it from stretching while you pipe your topping or icing out. Then, place your tip in the bag and snip off just the tip of it, enough so that the opening of the tip is fully exposed. This is an excellent icing bag in a pinch.
Using a small spoon, place a dollop of pie filling in the center of each cookie. The border will help hold it in place and you now have a beautiful little pie bite.
Oh my goodness, these are so pretty! They are just the right amount of sweetness, too.
Serve immediately and enjoy!

Ingredients
- 1 can Pie Filling of your choice or multiple varieties
- 1 pkg. Lorna Doone Shortbread Cookies

- Ready to eat!

WOW looks great!
Thanks,
Thank you, Jean! ๐
These are adorable and look so easy and festive!
Thank you so much, Mary!
I have a question, please. If made ahead and taken somewhere, do the cookies get soggy?
I don’t think they would get soggy but the main thing is they will be really difficult to travel with because I’m afraid the whipped topping and pie filling would get tossed about a good bit in the car. I would get my whipped topping in an icing bag and assemble them on site. OR you might could try making them ahead of time and freezing them, then taking them directly from the freezer to the car. I think that would work beautifully.
Nice, quick, and not too sweet. Love it. Could you put a dab of Cream Cheese frost in the middle in the place of the Apple Pie filling to have Red, White, & Blue for July 4th??
frosting, not frost! The ready-made.
Oh my goodness, what a neat idea!! Makes it even better ๐
I love #LornaDoone cookies. I am gonna whip some up for the 4th and I’m gonna use a tiny dollop of all natural orange marmalade on some as well. TY so much for the recipe.
This looks so easy and so yummy! I want to try….do i need an “occasion” or do you think it would alright if I just make some for a snack? ๐
I think a snack is the perfect occasion!!
I will certainly try this. This is a great recipe for busy working moms! Thanks for sharing your ideas.
Yes Mede!! It is perfect for busy moms!!
Oh I love Lorna Doones! Have to try these. Thanks Christy!
๐ I hope you enjoy them!!!
Adorable looks like the perfect tea party main event with a grandaughter would be very easy for her to make thankyou will tuck this away.
Great idea Kathy!!
These look wonderful. Also a good way to have children help with the desserts for class parties–learning on several levels with a great treat afterward! Thank you!
So true Cynthia!!
I’m planning on making these for the 4th of July tomorrow. Do you think the cookie would get soggy if I made these today?
I am so sorry Linnie, I am a little late getting to your question. How did they turn out?
I made them early on the 4th. Was afraid they might get soggy. I made it in the shape of a flag. Used blueberry pie filling for the stars and strawberry filling for the stripes. Really pretty and good. I made a picture if you would be interested in seeing it.
Could I use the whip cream in the
Can?
Cream cheese icing instead of cool whip would be delicious!!!
I make an apple/pear sauce with cinnamon…(pears are my sweeter) NO SUGAR ADDED….
So mine will be apple pie with whip cream….:)
sounds wonderful!
Yummy idea!
